Creamy Cauliflower Potato Soup

In medium soup pot:
Sauté:
2 tablespoons olive oil
1 package frozen riced cauliflower
1/3 cup chopped yellow onion
1 large carrot peeled and chopped

Add:
1/2 package pizza beer company ranch dressing mix
1 cup mashed potatoes
2 cups chicken broth
1 cup milk
2 slices Gouda or Swiss cheese
2 tablespoons fresh grated Parmigiana/ Romano cheese
Salt & fresh ground black pepper to taste.
Simmer until onion and carrots are tender. Blend with immersion hand blender.
